Ingredients for 1 servings:

  • 50 g mustard seeds
  • 5 g salt
  • 5 g Stevia
  • 1 slice(s) onion(s)
  • ¼ bay leaf
  • 2 black peppercorns
  • Allspice, 1 grain
  • 3 coriander seeds
  • Juniper berry(s), 1 berry
  • ½ pinch of cayenne pepper
  • ½ pinch of turmeric
  • 1 pinch of tarragon
  • 1 pinch of thyme
  • 2 rosemary needles
  • 30 g lemon juice
  • 50 g water
  • 10 g sunflower oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Grind the solid ingredients very finely in a high-powered blender. Add the liquids and emulsify. This mustard has a nice tang and adds a great flavor to salad dressings, for example. Makes about 230 ml. I always make three times the amount and fill the mustard into hot, rinsed jam jars. It will keep for several months in the refrigerator.
