Gâteau creusois – Traditional French nut cake

Ingredients for 1 servings:

  • 100 g nuts or almonds, ground
  • 125 g butter, melted
  • 100 g sugar
  • 100 g flour
  • 4 egg whites

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

for a 20 – 22 cm springform pan

Preheat the oven to 180°C (top/bottom heat). Grind nuts or almonds, or use pre-ground ones. I use fresh walnuts from the garden and toast them briefly. It tastes even more aromatic, but you’ll need to allow a little extra time. This also allows everything to cool slightly before continuing. Melt the butter and let it cool slightly. Beat the egg whites until stiff peaks form. Mix the ground nuts, flour, and sugar. Add the melted butter and mix. Then carefully fold in the beaten egg whites and pour the batter into a small 20-22 cm springform pan. (I use an ovenproof round glass casserole dish.) Bake in the preheated oven on the middle rack for about 25-30 minutes.
