Genuine South Tyrolean speck dumplings

Ingredients for 6 servings:

  • 600 g rolls or white bread from the previous day
  • 200 g bacon, South Tyrolean (smoked belly is better)
  • 1 onion(s), finely chopped
  • 2 tbsp butter
  • 4 eggs
  • 500 ml milk
  • 4 tbsp flour
  • 2 tbsp parsley, chopped
  • 3 liters of meat broth
  • 1 bunch chives, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Melt the butter in a pan and fry the finely chopped onion very slowly until it is well browned. Cut the rolls or white bread and the bacon into small cubes and put everything in a large bowl. Now add the remaining ingredients and mix everything well. As soon as the onions are browned, add them along with the butter and mix again. Let this mixture rest for about 20 minutes. Then, with wet hands, form dumplings about the size of tennis balls and simmer them in the meat broth over low heat for about 20 minutes. Serve on plates with the broth, sprinkle with chives and serve.
