Georgian cheese puff pastry

Ingredients for 6 servings:

  • 2 packs of puff pastry
  • 200 g feta cheese, made from cow’s milk
  • 200 g cheese (Gouda or other meltable)
  • 1 egg(s)
  • 2 tbsp flour, sifted
  • Egg(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the feta with the cheese, egg, and flour until evenly moist. If it’s too dry, add a little milk if necessary. Divide the puff pastry in half and form one half into a flat sheet on a baking sheet. Spread the cheese mixture over this half. Place the second half of the puff pastry on top, pressing it down, brush with egg, and bake at 200°C until golden brown. This recipe is perfect as a snack, e.g. with strong red or white wines, but can also be served with a salad as a full meal, as it is very filling. Feta made from sheep’s milk has a very bitter aftertaste and is therefore not suitable.
