Ingredients for 3 servings:

  • 220 g water, lukewarm
  • ½ cube of fresh yeast
  • 400 g flour
  • 1 tsp sugar
  • 1 tsp salt
  • 300 g Handkäse (Harzer Handkäse)
  • 1 can tomatoes, pureed
  • 4 onions, cut into rings or pieces
  • oregano
  • e.g. Jalapeño(s)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 40 minutes

Mix the water, yeast, and sugar together and let stand for 2 minutes, then combine with the flour and salt to form a dough. Line a baking sheet with parchment paper and spread the dough evenly. Place the baking sheet in the oven and let it rise for at least 1 hour. You can also use the dough immediately, but it won’t be nearly as crispy! Remove the baking sheet from the oven and preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Spread the passata evenly over the crust and top with jalapeños and onions. Season everything with salt and pepper to taste. Cut the Harzer cheese wheels into 3, or better yet, 4 slices per wheel and arrange them on the baking sheet. Finally, sprinkle with oregano to taste. Place the pizza in the preheated oven and bake for about 18 minutes. The entire sheet has about 5 grams of fat! Of course, you can also top the pizza with gyro, tuna, or any other ingredients. It tastes great! You just have to pay attention to the fat content of the ingredients.
