Ingredients for 1 servings:

  • 500 g flour
  • 22 g yeast, fresh
  • 50 ml water
  • some salt, about 1/3 tsp
  • 2 egg yolks
  • 180 ml milk (possibly 200 ml)
  • 100 g butter
  • 80 g powdered sugar
  • 1 tbsp rum
  • 50 g brown sugar
  • 1 tsp cinnamon

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Mix the water, yeast, and salt thoroughly and let it rest for 30 minutes. Then, knead the flour, egg yolk, milk, butter, powdered sugar, rum, and the water, yeast, and salt mix into a nice, smooth yeast dough. Keep it warm and let it rise until doubled in size. Knead once on a floured board. Cut the dough into 5 pieces, shape them into strands about 60 cm long. Mix the sugar and cinnamon and sprinkle them on the board, then roll the strands in the sugar. Braid the dough into a plait. Place it on a baking sheet lined with baking paper. Brush with milk and sprinkle with the remaining sugar. Place in the oven and let it rest for another 15 minutes. Then preheat the oven to 160°C (fan oven) and bake for about 35 minutes.
