Sea bass on fire

Ingredients for 3 servings:

  • 800 g fish fillet(s) (sea bass, alternatively hake, zander or salmon)
  • e.g. olive oil
  • Rosemary or lavender, some sprigs
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 160°C. Prepare the fish as usual – season inside and out with salt and pepper, and rub in the olive oil. Arrange the herb sprigs on a baking sheet and place the fish on top. Place in the oven and bake for about 20 minutes, brushing with olive oil occasionally. After baking, light the sprigs and serve the fish burning on the baking sheet. But be careful – this can supposedly cause explosions, sending glowing particles flying through the air (although that’s never happened to me!). We’re serving it with ratatouille and garlic baguette.
