Arabic clove and almond cookies

Place the almonds, skin on, on a baking sheet. Roast for 5 minutes. Place 400g of the almonds in a food processor and chop, reserving the remaining almonds for garnishing. Put the sugar in a bowl, crack the eggs into them, and add the ground cloves. Add the baking powder, vanilla sugar, and cinnamon and whisk vigorously. Add the roasted and chopped almonds to the mixture and knead by hand until a smooth dough forms. Take some dough in your hand, moistened with a little water, and shape into small balls, flattening them slightly. Press one side of each ball into the powdered sugar. Press an almond into the center of each cookie. Place the cookies on an oiled baking sheet or lined with baking paper and bake for 10 minutes at 140°C.
