Ingredients for 1 servings:
- 250 g corn flour
- 250 g desiccated coconut
- 200 g powdered sugar
- 200 ml oil
- 4 eggs
- 7 g baking powder
- 1 pinch of salt
- 50 g almonds, halved
- 50 g powdered sugar

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes
makes about 50 cookies
Crack the eggs into a bowl and mix with the oil and sugar. Add the desiccated coconut, salt, cornflour, and baking powder and knead into a smooth dough. Scoop out the dough with a teaspoon and roll it into small, round balls. Place on a greased or parchment-lined baking sheet. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Sprinkle the cookie balls with powdered sugar and press half an almond onto each ball. Bake in the middle of the oven for about 12 minutes, until golden brown. I got this recipe from a Moroccan wedding cook. The dough makes enough for about 50 cookies.
