Ingredients for 4 servings:
- 4 slice(s) brown bread, fresh
- butter
- 4 slice(s) ham, cooked
- 4 eggs
- 4 spring onions
- 1 box of watercress
- salt and pepper
- Tabasco
- 100 g cheese, grated (e.g. Emmental)
- 4 gherkins, spicy or salted
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Whisk the eggs with the spices. Add the washed and finely chopped spring onions and scramble the eggs in a pan. Use a little butter. After 2 to 3 minutes, add the grated cheese and toss the eggs frequently until melted. Meanwhile, toast the brown bread, spread it with plenty of butter, and place a large slice of ham on each slice. Divide the bread onto appropriately sized plates and place the scrambled eggs on top. Sprinkle the washed watercress over the bread. Cut the gherkins into fans and decorate them next to the brunch toast. Serve with tea or coffee, juice, or mineral water. Of course, cold beer is also a good option—perhaps for a light late-night dinner.
