Ingredients for 1 servings:

  • 500 g wheat flour type 405
  • 500 g ginger, candied, diced
  • 350 g butter
  • 150 g sugar
  • 2 eggs
  • 6 g salt
  • 10 g ginger powder
  • Butter for the baking tray

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 25 minutes

Mix all ingredients except the ginger with the dough hook on a slow speed mixer until you have a smooth dough. Add the ginger and knead until the ginger pieces are evenly distributed. Divide the dough into thirds and shape each into a 5cm diameter roll wrapped in cling film. Store in the freezer for 30-60 minutes. Cut thin slices with a very sharp knife and place on a buttered baking tray or baking foil. Slicing is very time-consuming and takes about 30-40 minutes. Bake at 150°C fan oven on levels 1, 3 and 5 for about 25-30 minutes until golden yellow to golden brown, if desired. Or bake the trays one after the other at 170°C top/bottom heat on the middle rack.
