Ginger cookies with chocolate

Ingredients for 1 servings:

  • 120 g butter, soft
  • 100 g brown sugar
  • 50 g white sugar
  • 1 egg(s)
  • 175 g flour
  • ½ tsp baking powder
  • 1 pinch of salt
  • 1 tbsp fresh ginger
  • 3 tbsp ginger, pickled in syrup
  • 50 g dark chocolate
  • 1 tbsp orange peel, grated or sliced

Working time approx. 20 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 38 minutes

Cream the butter with sugar and egg until fluffy. Sift in the flour and baking powder and add a pinch of salt. Chop the ginger and chocolate into small pieces and add them to the batter along with the syrup (about 1 tablespoon) and orange zest. Fold in evenly with a spoon. Line baking sheets with baking paper. Place heaped teaspoons of batter on the baking sheets, about 5 cm apart. Bake in a preheated oven at 150°C for 18-20 minutes until golden brown. After baking, remove the sheets from the oven and let the cookies cool completely.
