Ingredients for 5 servings:

  • 300 g ginger, fresh, peeled
  • 700 ml white wine
  • 250 ml apple juice
  • n. B. water
  • 1 kg gelling sugar
  • 2 packs of Gelfix (1:1)
  • 3 tbsp lemon juice

Instructions

Working time approx. 2 hours; Cooking/baking time approx. 1 hour 7 minutes; Total time approx. 3 hours 7 minutes

I’ve finally managed to make a ginger jam that’s no longer runny, but has a nice gel!

Dice half of the ginger and finely grate the other half. Place both in a saucepan with the wine and apple juice and simmer for about 1 hour. Add a little water occasionally. Then pour the contents of the pan through a fine sieve into another saucepan. Mix the liquid with the gelling sugar and the gel-fix. Add about half of the solids remaining in the sieve and simmer for about 7 minutes. Pour into jam jars and screw on the lids.
