Ginger spinach

Ingredients for 2 servings:

  • 2 tbsp oil
  • 1 tsp mustard seeds
  • ¼ tsp cumin
  • ¼ tsp turmeric
  • ½ tsp spice mix (Garam Masala)
  • 1 onion(s), halved and sliced
  • 1 tbsp fresh ginger, finely diced
  • 3 cloves garlic, thinly sliced
  • 1 chili pepper(s), halved lengthwise and thinly sliced
  • 500 g spinach, fresh
  • 1 tbsp margarine
  • 4 tomatoes, roughly diced
  • salt and pepper
  • 2 tbsp coriander greens, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the oil and toast the mustard seeds and cumin seeds for one minute, stirring. Add the cumin and turmeric and toast for another minute. Add the onions and ginger and sauté until softened. Add the garlic and chili and sauté for another 2-3 minutes. Add the spinach and cook, stirring, until wilted. Add the margarine and tomatoes and sauté until the spinach is tender. Season with salt and pepper and serve sprinkled with coriander.
