Ingredients for 1 servings:

  • 150 g honey
  • 150 g maple syrup
  • 200 g butter
  • 500 g flour (whole wheat)
  • 1 pack of gingerbread spice
  • 10 g potash
  • 3 tsp water
  • 5 tbsp honey
  • 2 tbsp butter
  • 3 tbsp orange juice
  • 100 g sugar (sprinkles), for decoration

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Heat the honey, maple syrup, and butter in a saucepan until the butter has melted. Let cool. Combine the whole-wheat flour and gingerbread spice in a bowl and stir in the butter mixture. Dissolve the potash in the water and knead it in. Let the dough rest at room temperature for 24 hours. Preheat oven to 180°C (350°F). Roll out the dough on a floured surface to a thickness of 0.5-1 cm and cut out hearts (5 cm in diameter) (or gingerbread men, or gingerbread house shapes, or shape the dough with your hands). Place on a baking sheet lined with parchment paper and bake on the middle rack of the oven for 12 minutes. Let cool. For the glaze, heat the butter and honey in a saucepan until the butter has melted. Stir in the orange juice and brush it onto the hearts. Sprinkle sugar sprinkles on the wet glaze, if desired.
