Ingredients for 1 servings:

  • 250 g honey, invert sugar (artificial honey)
  • 250 g sugar
  • 200 g butter
  • 2 eggs
  • 100 g hazelnuts, coarsely chopped
  • 500 g flour, (405)
  • 50 g cocoa powder
  • 1 pt. gingerbread spice
  • 5 g ammonium bicarbonate
  • 50 g cherry brandy
  • 100 g walnuts, coarsely chopped
  • 400 g apricot jam
  • 300 g cake icing, chocolate

Instructions

Working time approx. 1 hour; Rest period approx. 1 day; Total time approx. 1 day 1 hour

Boil the artificial honey with sugar. Let it cool, and then use the remaining ingredients (except the walnuts, jam, and chocolate coating) to make a dough. Roll out the dough into two equal pieces, about 1 cm thick, and bake. Bake at 170°C for about 15 minutes, depending on your oven. Please do not overbake! Once cooled, spread the strained jam on top. Distribute the walnuts evenly and place the two pieces together. Press firmly together and cut into pieces (2×4 cm). Cover the gingerbread pieces with chocolate coating like dominoes. Let it set for at least 1 day.
