Ingredients for 4 servings:
- 100 g candied lemon
- 100 g candied orange peel
- 100 g almonds, ground
- 200 g hazelnuts, ground
- 250 g powdered sugar
- 4 eggs
- 1 tbsp cinnamon
- 1 tsp. clove powder
- 1 pinch of nutmeg powder
- 1 lemon(s), zest
- 1 pack of wafers
- 2 packs of chocolate glaze
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Finely grind the candied orange and candied lemon peel. Mix all ingredients into a batter. Spread the batter evenly over the wafers to a thickness of 1 cm and place them on a prepared baking sheet. Bake in a preheated oven at 180-200°C (top/bottom heat) for about 10 minutes. The gingerbread should still be soft. Cover with the chocolate glaze while still warm.
