Gingerbread and apple shortbread

Ingredients for 1 servings:

  • 150 g sugar
  • 3 m.-sized eggs
  • 125 g almonds or other nuts
  • 150 g apple, grated
  • 2 tsp gingerbread spice
  • 1 tsp cinnamon
  • 250 g flour
  • Almond(s), whole

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

quick and incredibly delicious cookies, makes about 25 pieces

Beat the whole eggs with the sugar until thick and foamy. Combine the flour with the spices and nuts and fold in with a spatula. Finally, fold in the grated apple. Fill the batter into a piping bag and pipe about 12 tufts onto each baking sheet. Lightly press a whole almond into the center. Bake the cookies for 10-15 minutes at 180°C. Important! Every oven is different; I love these cookies soft, so it’s better to bake them for less time than too long! Also, the batter will spread a bit, so don’t pipe them too close together!
