Gingerbread muffins

Ingredients for 12 servings:

  • 150 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • 100 g almond(s), ground.
  • 2 tbsp gingerbread spice
  • 2 m.-sized eggs
  • 2 tbsp honey
  • 2 tbsp cane sugar
  • 100 g butter, soft or margarine
  • 200 ml milk
  • 100 g dark chocolate
  • 200 g semi-sweet chocolate coating
  • 12 pieces almond(s), peeled

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Preheat the oven to 200°C. Grease the muffin cups or place paper (silicone) baking cups in the holes. Sift flour and baking powder into a bowl, mix with baking soda, salt, almonds, and gingerbread spice. Whisk the eggs with honey, sugar, fat, and milk. Finely chop the chocolate and stir into the egg mixture. Add the flour mixture and carefully fold in. Pour the batter into the cups, bake for 20 to 25 minutes, let cool slightly, and remove from the pan. Melt the chocolate coating in a hot water bath and evenly coat the muffins. Place an almond on top of each muffin while the glaze is still wet. These delicious muffins are a must-have for Christmas.
