Onion muffins

Ingredients for 12 servings:

  • 200 g onion(s)
  • 80 ml oil
  • 1 bunch of chives
  • 1 egg(s)
  • 200 ml buttermilk
  • 250 g flour
  • 2 tsp baking powder
  • 1 tsp salt
  • Pepper, black from the mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Preheat oven to 200°C. Grease muffin cups or place paper (silicone) baking cups in them. Peel and finely dice the onions, and sauté with 1 tablespoon of oil until translucent. Wash and finely chop the chives. Whisk the egg with the remaining oil, buttermilk, and pepper. Stir in the chives and onions. Mix the flour, baking powder, and salt, sift over the egg mixture, and gently fold in. Pour the batter into the muffin cups and bake for 20 to 25 minutes. Let cool slightly, remove from the cups, and serve lukewarm. Serve with a mixed salad.
