Ingredients for 1 servings:
- 250 g honey
- 125 g sugar
- 1 egg(s) (size M)
- ½ tsp clove(s)
- ½ lemon(s), untreated, grated peel
- 50 g candied lemon peel
- 50 g candied orange peel
- 50 g almonds or nuts, peeled
- 125 ml milk, just under
- 2 tbsp cherry brandy
- 2 tsp baking powder
- 375 g flour
- Grease for the tray
- Jelly (blackcurrant jelly)
- Chocolate (glaze)
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes
Make a foamy mixture from honey, sugar, egg, and spices. Stir in the weighed candied lemon and orange peel, along with the peeled, grated almonds or nuts. Add a little milk and kirsch. Mix in the sifted flour and baking powder. The dough should be difficult to tear from the spoon and have a soft texture. Spread the dough about 1.5 cm thick onto a well-greased baking sheet and bake at medium heat (180 degrees Celsius) for 30-40 minutes. While it is still hot, cut into diamonds or slices with a sharp knife. Allow to cool, then spread with blackcurrant jelly if desired (especially the cut edges) and allow to dry slightly. Cover with punch or chocolate glaze (this reduces the risk of drying out). Store in a cool container.
