Ingredients for 1 servings:
- 500 g spelt flour
- 1 pack of cream of tartar baking powder
- 1 pinch of salt
- 2 packs of gingerbread spice
- 1 tsp cinnamon
- ¼ tsp clove(s), ground
- 200 g butter
- 300 g honey, light
- 1 egg yolk
- 1 egg(s), whole
- 2 tbsp cream
- e.g. nuts, almonds, raisins
- e.g. cake icing (chocolate/sugar glaze)
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Mix the “dry” ingredients together well. Heat the butter and honey slowly and let cool again. Whisk the egg, egg yolk and cream. Mix all ingredients together very well. Let rest for at least two hours. Preheat the oven to 160 degrees top/bottom heat. Roll out the dough to about 0.5 cm thick and cut out large shapes (e.g. with a cup). Bake for about 20 minutes. Tip 1: Decorate with raisins, nuts or almonds before baking, pressing them in well. Tip 2: Or glaze with sugar or chocolate icing instead. Tip 3: If you don’t have the time or don’t feel like cutting out shapes, you can simply spread the dough on a baking tray lined with baking paper. Glaze/decorate after baking and cut into pieces.
