Glass noodle salad

Ingredients for 4 servings:

  • 100 g glass noodles
  • 2 chicken breast fillets
  • 2 carrots
  • 1 large spring onion(s)
  • 1 lime(s), juice
  • 1 chili pepper(s), red (or flakes)
  • 5 tbsp soy sauce (tamari)
  • Salt
  • Ginger, fresh or ground
  • Oil (sesame oil)
  • possibly garlic

Working time approx. 30 minutes; Total time approx. 30 minutes

Prepare the glass noodles according to the package instructions, cutting them into fork-friendly pieces. After blanching, drain in a colander. Wash the chicken breast, pat dry, and fry all over in hot sesame oil. Remove and season with salt, then cut into small slices or pieces. Peel and wash the spring onions and carrots. Thinly slice the carrots and slice the spring onions. For the marinade, mix the lime juice with the soy sauce and add a finely chopped piece of ginger and the deseeded, finely chopped chili pepper. Mix the glass noodles, chicken, carrots, and spring onions. Pour the marinade over the chicken and let it marinate well. If you like, you can also add garlic to the salad.
