Glass noodle salad with mango

Ingredients for 2 servings:

  • 50 g glass noodles
  • 1 half mango(s), 250 g
  • ½ bunch of spring onions
  • 1 small red bell pepper(s)
  • 100 g roast beef cold cuts
  • 5 tbsp chili sauce, sweet
  • 4 tbsp lime juice
  • 30 g peanuts, salted

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the glass noodles according to the package instructions, rinse, and drain well. Peel the mango and slice the flesh. Finely chop the white and light green parts of the spring onion. Deseed the bell pepper and cut into strips. Cut the noodles in half several times with kitchen scissors and serve with the mango, spring onions, bell pepper, and roast beef. Mix the chili sauce with the lime juice and drizzle over the salad with the peanuts.
