Glass Noodle Salad with Cashew Nuts, Mango, Cucumber, Coriander and Spring Onions

The perfect glass noodle salad with cashew nuts, mango, cucumber, coriander and spring onions recipe with a picture and simple step-by-step instructions.

  • 2 packet Glass noodles
  • 150 g Cashew
  • 2 Pc. Mangoes
  • 2 Pc. Cucumber
  • 1 bunch Coriander
  • 1 bunch Spring onions
  • 2 Pc. Chili
  • 15 Pc. King prawns
  • 6 tbsp Sesame oil
  • 3 tbsp Fish sauce
  • Salt and pepper
  • 3 tbsp Lime juice
  • 3 tbsp Whole cane sugar
  • 4 Pc. Garlic cloves in olive oil
  1. Cut the mangoes and cucumber into small cubes, chop the coriander, chilli and spring onions. Mix the ingredients with the sesame oil, fish sauce, lime juice, 1 tbsp sugar and salt and pepper. Cut the cashew nuts into small pieces and caramelize with 2 tablespoons of sugar in the pan, then add to the remaining ingredients.
  2. Cook the pasta as instructed and then rinse with cold water. Cook the prawns in a pan with the garlic and olive oil until they are al dente.
  3. Fry the pasta briefly again in the pan with a little oil and then mix vigorously in the bowl with the remaining ingredients.
