Ingredients for 2 servings:
- 100 g glass noodles
- 1 bell pepper(s), red
- ½ mango(s)
- 1 avocado(s)
- some lime juice
- 12 shrimps
- Oil for frying
- 2 tbsp peanuts, roasted
- 2 tbsp sweet chili sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 chili pepper(s), red, pitted, finely diced
- 1 tbsp sesame oil, light
- salt and pepper
Instructions
Working time approx. 25 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 48 minutes
Asian spiced
Soak the glass noodles in hot water for about 5 minutes according to the package instructions. Then drain well in a sieve and chop slightly. Mix the dressing ingredients and mix with the glass noodles. Halve and deseed the bell pepper. Peel and stone the mango. Cut the bell pepper and mango into thin strips and then cut these crosswise again. Halve the avocado, remove the stone, scoop out the flesh from the skin, also cut into strips and immediately drizzle with a little lime juice. Add the bell pepper and mango strips to the glass noodles and season to taste. Carefully fold in the avocado. Briefly fry the shrimp in the heated oil and add to the salad along with the peanuts.
