Glass noodles with fried crab meat

Ingredients for 6 servings:

  • 200 g glass noodles
  • 2 tbsp oil
  • 10 shallots, Asian
  • 3 cloves garlic
  • 2 stalks of lemongrass
  • 1 red bell pepper(s)
  • 170 g crab meat, from the can
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 2 tsp sugar
  • 1 bunch coriander greens, chopped
  • 3 spring onions

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Bring water to a boil and pour over the glass noodles. Let it soak for 20 minutes. Thinly slice the shallots, finely dice the garlic cloves, flatten the white part of the lemongrass, and fry everything in hot oil for two minutes. Cut the bell pepper into strips and halve these again. Fry briefly, then add the drained glass noodles. Stir through, cover, and let stand for one minute. Check the crab meat again for any remaining shell, then mix with the fish sauce, lime juice, coriander, and sugar. Fold into the glass noodles and season with salt and pepper. Slice the spring onions diagonally and sprinkle over the glass noodles before serving.
