Glass noodles with vegan peanut butter sauce

Ingredients for 1 servings:

  • ½ package of glass noodles, approx. 125 g
  • ½ jar peanut butter, approx. 175 g
  • 1 onion(s)
  • 2 small garlic cloves
  • 1 tbsp olive oil
  • 1 tbsp agave syrup or date syrup
  • 4 tbsp tamari sauce or soy sauce
  • 1 tbsp water
  • ½ lemon(s), juice
  • sesame
  • Cress or sprouts of your choice

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

Vegan dish in 10 minutes

Cook the glass noodles for about 3-5 minutes, drain well, and place in a small bowl. For the sauce, add the peanut butter, onion, garlic, lemon juice, date syrup or agave syrup, water, a little oil, and tamari or soy sauce to a blender. Blend everything into a smooth, creamy paste and pour over the noodles. Garnish with sesame seeds and cress or other sprouts of your choice. The advantage of tamari sauce is that it is gluten-free, making it a great alternative to soy sauce, especially for those with allergies. However, if you don’t have a problem with gluten, you can of course use the tried-and-true soy sauce.
