Ingredients for 2 servings:

  • 2 m.-sized carrot(s)
  • ½ cup peas, frozen
  • 1 tbsp agave syrup
  • salt and pepper
  • 100 ml water

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cut the carrots into approximately 0.5 cm thick strips and cook with the water in a non-stick pan on high heat for 5-10 minutes, until the carrots are tender enough to eat. Add salt, pepper, and agave syrup. The water should be evaporated when the carrots are tender enough to eat; you may need to add a little more water. Just before the end, add the peas and serve. I use the peas purely for the look; you can replace them with fresh herbs like parsley or beans. This is a perfect children’s meal. It goes well with rice or potatoes with a light sauce, chicken, fish… I think anything goes.
