Ingredients for 4 servings:
- 800 g turnips, white, small, peeled, sliced
- 1 bunch of flat-leaf parsley, chopped
- 40 g butter
- 1 tbsp sugar
- 1 tsp vinegar, raspberry, alternatively: red wine vinegar
- Salt
- White pepper, freshly ground

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes
especially good with veal
Melt butter in a saucepan over low heat. Caramelize the sugar in it. Add the turnips, season with salt and pepper, and toss to combine. Cover and simmer for 5 minutes with 3 tablespoons of water. Then simmer uncovered for 5-7 minutes until the liquid has reduced to a syrupy consistency. Add the parsley and season generously with vinegar, salt, and pepper.
