Gluten- and sugar-free muffins

Ingredients for 1 servings:

  • 125 g butter
  • 1 tbsp butter
  • 2 ½ tbsp xylitol (sugar substitute)
  • 1 tbsp vanilla
  • 2 eggs
  • 200 g almond flour
  • 2 tbsp millet flour
  • 1 tsp baking soda
  • 1 tbsp buttermilk or yogurt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Makes 12 super moist muffins.

Cream the butter with sugar, vanilla, and eggs until creamy. Lightly mix the almond flour, millet flour, and baking soda. Optionally, grate some sugar-free chocolate. Carefully fold the flour mixture, chocolate (if desired), and buttermilk into the butter mixture. Pour the batter into muffin tins. Bake at approximately 165°C (325°F) for about 15 minutes.
