Gluten-free apple cake with crumble

Ingredients for 4 servings:

  • 3 eggs
  • 100 g butter
  • 100 g sugar
  • some vanilla flavor
  • 75 g flour (flour mix C from Schär)
  • 75 g coconut flour
  • 1 pinch of salt
  • 1 tsp baking powder
  • some rum
  • 2 apples
  • some sugar
  • some cinnamon
  • 40 g butter
  • 40 g coconut blossom sugar
  • 20 g coconut flour
  • Cinnamon
  • Fat and desiccated coconut for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Cream the butter with the egg yolks and sugar until fluffy. Add the flavoring. Stir the flour and baking powder into the butter mixture. Then fold in the beaten egg whites. Grease a springform pan and sprinkle with desiccated coconut. Sprinkle some cinnamon and/or chocolate sprinkles or desiccated coconut on the batter. Peel, core and eighth the apples and press them into the batter. Sprinkle some sugar on the apples. Mix together the ingredients for the crumble and sift into crumble. Spread on the cake. Bake the cake at 180 degrees (top/bottom heat) for about 45 minutes.
