Paprika-ginger chicken

Ingredients for 3 servings:

  • 3 chicken breasts
  • 1 bunch of spring onions
  • 2 bell peppers
  • 1 piece(s) ginger, approx. thumb-sized
  • 50 ml soy sauce
  • 1 tbsp sesame oil or olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cut the chicken breasts and bell peppers into 1 cm cubes, slice the spring onions into thin rings, and finely chop the ginger. Add oil to the hot pan, season the chicken with salt and pepper, and add it to the pan. Sauté for about 3-5 minutes, then remove from the pan. Sauté the white part of the spring onion, the ginger, and the bell peppers for 2-3 minutes. Then add the chicken and the green part of the spring onion to the pan and sauté briefly again. Deglaze with soy sauce to taste. Serve with rice or coriander rice (add chopped coriander to the cooked rice and fold in).
