Gluten-free banana waffles

Ingredients for 1 servings:

  • 4 m.-sized eggs
  • 190 g butter or margarine, room temperature
  • 300 g banana(s), ripe, mashed
  • 30 g Bourbon vanilla sugar
  • 4 tbsp sugar
  • 750 ml milk, room temperature
  • 500 g flour, gluten-free (Schär Mix C Cakes & Cookies)
  • 1 ½ packets of baking powder
  • 2 tsp salt
  • e.g. milk icing or powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Separate the eggs, beat the egg whites until stiff, and chill. Mash the bananas. Beat the egg yolks until creamy. Now add the margarine, sugar, bourbon vanilla sugar, mashed bananas, and milk to the egg yolks and mix in. Combine the flour with the baking powder and salt and stir into the egg mixture. Finally, fold in the beaten egg whites (do not stir!). Let the batter rest for about 30 minutes. Then bake in the waffle iron until golden brown. Let the waffles cool and, if desired, top one side with milk glaze or sprinkle with powdered sugar.
