Gluten-free Christmas cookies – delicious cinnamon stars

For the gluten-free version of the delicious Christmas cookies, you need 500 grams of ground almonds, 425 grams of powdered sugar, 2 teaspoons of cinnamon, and 3 egg whites.

  1. First, mix the ground almonds with 2 teaspoons of cinnamon in a bowl.
  2. Now separate the egg whites from the yolks and place two of the whites in a new bowl. The other must be saved for the glaze.
  3. Then, using a hand mixer, beat the egg whites and slowly add about 100 grams of the powdered sugar until the egg whites have set.
  4. Now add 200 grams of icing sugar and the beaten egg white mixture to the almond and cinnamon mixture and mix everything together well.
  5. Then refrigerate the mixture for about an hour.
  6. In the meantime, you can focus on the glaze. To do this, mix an egg white with 125 grams of icing sugar and beat it until fluffy.
  7. Then preheat the oven to 125°C fan oven.
  8. Now it’s time to cut out the stars: First, roll out the dough and use the cookie cutters to cut out the stars.
  9. Brush the stars you cut out with the glaze and then place them on a baking tray lined with parchment paper.
  10. Finally, the stars have to go in the oven for about 13 to 15 minutes.

Classic butter cookies

Butter biscuits are one of the classic pastries of the Christmas season. For the gluten-free recipe, you will need 370 grams of the gluten-free flour mix, 100 grams of powdered sugar, 1 pack of bourbon vanilla sugar, 1 pinch of salt, 130 grams of cold butter, and 1 teaspoon of cream of tartar baking powder, and 2 eggs.

  1. First, put the flour mixture with the bourbon vanilla powder, powdered sugar, salt, and baking powder in a bowl and mix the ingredients well.
  2. Then cut the butter into cubes and add this to the bowl along with the other remaining ingredients. Now knead the mass with your hands for a few minutes until it forms a smooth dough. Alternatively, you can let the dough hook of the food processor do this.
  3. Then put the dough in the fridge for 10 to 20 minutes and in the meantime preheat the oven to 175°C top and bottom heat.
  4. To cut out the biscuits, the dough must first be rolled out on a floured work surface. This works best if you do it in portions.
  5. Then use your cookie cutters to cut out the biscuits and place them on a baking tray lined with parchment paper.
  6. Then the cookies have to go in the oven for about 12 to 15 minutes. You can then decorate them however you like.
