For the gluten-free version of the delicious Christmas cookies, you need 500 grams of ground almonds, 425 grams of powdered sugar, 2 teaspoons of cinnamon, and 3 egg whites.
- First, mix the ground almonds with 2 teaspoons of cinnamon in a bowl.
- Now separate the egg whites from the yolks and place two of the whites in a new bowl. The other must be saved for the glaze.
- Then, using a hand mixer, beat the egg whites and slowly add about 100 grams of the powdered sugar until the egg whites have set.
- Now add 200 grams of icing sugar and the beaten egg white mixture to the almond and cinnamon mixture and mix everything together well.
- Then refrigerate the mixture for about an hour.
- In the meantime, you can focus on the glaze. To do this, mix an egg white with 125 grams of icing sugar and beat it until fluffy.
- Then preheat the oven to 125°C fan oven.
- Now it’s time to cut out the stars: First, roll out the dough and use the cookie cutters to cut out the stars.
- Brush the stars you cut out with the glaze and then place them on a baking tray lined with parchment paper.
- Finally, the stars have to go in the oven for about 13 to 15 minutes.
Butter biscuits are one of the classic pastries of the Christmas season. For the gluten-free recipe, you will need 370 grams of the gluten-free flour mix, 100 grams of powdered sugar, 1 pack of bourbon vanilla sugar, 1 pinch of salt, 130 grams of cold butter, and 1 teaspoon of cream of tartar baking powder, and 2 eggs.
- First, put the flour mixture with the bourbon vanilla powder, powdered sugar, salt, and baking powder in a bowl and mix the ingredients well.
- Then cut the butter into cubes and add this to the bowl along with the other remaining ingredients. Now knead the mass with your hands for a few minutes until it forms a smooth dough. Alternatively, you can let the dough hook of the food processor do this.
- Then put the dough in the fridge for 10 to 20 minutes and in the meantime preheat the oven to 175°C top and bottom heat.
- To cut out the biscuits, the dough must first be rolled out on a floured work surface. This works best if you do it in portions.
- Then use your cookie cutters to cut out the biscuits and place them on a baking tray lined with parchment paper.
- Then the cookies have to go in the oven for about 12 to 15 minutes. You can then decorate them however you like.
