Gnocchetti with lemon chicken

Ingredients for 4 servings:

  • 400 g pasta (gnocchetti) or other small noodles
  • 250 g chicken breast fillet(s), washed, dabbed and cut into fine strips
  • 200 g cherry tomatoes, washed and halved
  • 1 tbsp liquid honey
  • 100 ml chicken stock or vegetable stock
  • 1 organic lemon(s), rinsed with hot water
  • 2 rosemary sprigs, washed, plucked and finely chopped
  • Salt and pepper, from the mill
  • 20 g butter
  • 1 tbsp olive oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the pasta according to the package instructions. Grate the lemon zest and squeeze the juice. Set both aside. Fry the chicken strips in a pan with the heated olive oil until golden brown. Drizzle the seared meat with the honey and let it caramelize slightly. Then deglaze the chicken pieces with the stock and lemon juice. Add the tomatoes and lemon zest and cook for about 5 minutes. Add the rosemary and season with salt and pepper. Fold in the drained pasta with a little of the cooking water and the butter, season to taste, and serve immediately.
