Gnocchi and spinach minced casserole

Ingredients for 4 servings:

  • 450 g leaf spinach, frozen
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tbsp oil
  • 400 g minced meat, mixed
  • 1 pinch(s) of salt and pepper
  • 1 tbsp flour
  • 300 ml vegetable stock
  • 200 g double cream cheese
  • 100 g blue cheese (e.g. Bergader)
  • 100 g Gouda, grated
  • 600 g gnocchi (refrigerated section)
  • 2 tbsp pine nuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Heat 100 ml of water and spinach in a covered saucepan for approx. 15-20 minutes. Preheat oven (top/bottom heat: 200°C, fan oven: 180°C). Peel and dice the onions, peel and chop the garlic. Heat the oil in a pan. Brown the minced meat until crumbly. Add the onion, garlic, and flour, fry briefly, and season to taste. Add the stock and cream cheese, cover, and simmer for approx. 5 minutes. Cut the blue cheese into pieces and melt in the sauce along with 50 g of Gouda. Add the drained spinach and season to taste. Cook the gnocchi according to the package instructions, drain well, and place in an ovenproof dish. Pour the sauce over the top and sprinkle with the remaining 50 g of Gouda. Bake in the hot oven for approx. 20 minutes. Sprinkle with pine nuts approx. 5 minutes before the end of cooking time.
