Potato mince roll

Ingredients for 3 servings:

  • 3 potatoes
  • 200 g mozzarella, grated
  • 250 g minced meat
  • 1 onion(s)
  • ½ bell pepper(s)
  • 100 g tomato sauce
  • oil
  • salt and pepper
  • oregano
  • Sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Preheat oven to 200°C (top/bottom heat). Line a baking sheet with baking paper and sprinkle some of the cheese over it, almost evenly spaced. Wash, peel, and thinly slice the potatoes. Place the potato slices in a single layer, slightly overlapping, on the baking sheet with the cheese and brush with oil. Then bake for 25 minutes. In the meantime, dice the onion and bell pepper. In a pan, fry the minced meat with a little oil until crumbly. Add the onion and bell pepper and fry. After a few minutes, add the tomato sauce, salt, pepper, sugar, and oregano. Season to taste. When the potatoes are cooked through, remove the baking sheet from the oven. Spread the minced meat mixture over 3/4 of the potatoes. There shouldn’t be any mixture left on one narrow side, the end of the roll. There shouldn’t be too much mixture around the edges either, as it will naturally push itself there. Sprinkle some cheese over the minced meat mixture. Then, starting at the narrow side (with the filling), roll up to the narrow side without the filling. Then place the roll on the baking sheet and sprinkle with some cheese. Bake the potato and meat roll for another 15 minutes.
