Gnocchi:

  • 550 g Gnocchi

Mushroom Bacon Mass:

  • 250 g Mushrooms brown
  • 100 g Spring onion sticks
  • 125 g Bacon strips
  • 3 tbsp Sunflower oil
  • 1,5 Soup ladles Gnocchi water
  • 50 g Finely grated Parmesan
  • 50 g Sour cream
  • 100 g Grated Pecorino cheese

Tomato salad:

  • 300 g Tomatoes
  • 50 g Spring onion
  • 4 tbsp Olive oil
  • 3 tbsp Light balsamic vinegar
  • 1 tbsp Sugar
  • Pepper salt
  • 1 tbsp go. Roughly chopped basil leaves

Instructions
 

Gnocchi:

Mushroom Bacon Mass:

  • Brush off the mushrooms, cut off the stem a little at the bottom and cut them into large pieces. Clean the spring onions, cut into thicker pieces. Finely grate the Parmesan. Coarsely grate the pecorino. Preheat the oven to 200 ° O / bottom heat. Butter a baking dish approx. 20 x 20 cm and sprinkle with breadcrumbs.
  • Heat the oil in a pan. First lightly fry the bacon, then add the spring onions and then the mushrooms. When they start to become slightly translucent, deglaze everything with the 1.5 ladles of the gnocchi water and simmer for about 5 minutes over medium heat. Stir in the sour cream, remove the pan from the heat and stir in the Parmesan.
  • Now fill the first layer of the gnocchi in the baking dish, spread the mushroom mixture on top and sprinkle the pecorino over everything. Put the mold on the 2nd rail from the bottom in the oven for 20-25 minutes. The casserole should be nice and crispy.

Tomato salad:

  • During the cooking time of the casserole, wash the tomatoes, remove the stem and cut into pieces. Clean the spring onions and cut into thin slices. Mix the marinade with the oil, vinegar, pepper, salt and sugar and mix with the tomatoes and spring onions. Chop fresh basil and fold in.

Time required to make your own gnocchi:

  • The times given below only refer to the preparation of the casserole without making the gnocchi yourself. For this, a preparation time of 35 minutes, a rest time of 30 minutes and a cooking time of 5 minutes must be taken into account.
