Gnocchi in basil sauce

Ingredients for 2 servings:

  • 250 g gnocchi
  • 1 bunch of basil
  • 100 ml milk
  • 100 g mascarpone
  • 1 egg yolk
  • 100 g tomatoes
  • 50 g cheese
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cook the gnocchi, then transfer them to a baking dish. Chop the basil and mix with the milk. Add the mascarpone and egg yolk and mix well. Season with salt and pepper. Pour the mixture over the gnocchi. Peel and slice the tomatoes and arrange them on top of the gnocchi, then sprinkle with cheese. Bake at approximately 200°C (400°F) on the middle rack for 15 minutes.
