Spread the love

Ingredients for 2 servings:

  • 500 g gnocchi
  • 200 g smoked salmon
  • 150 ml white wine
  • 150 ml cream
  • 50 g crème fraîche
  • 1 onion(s)
  • 20 g basil
  • 1 tsp lemon juice
  • ½ tsp honey
  • 1 tsp green pesto
  • salt and pepper
  • Paprika powder, sweet
  • Paprika powder, hot
  • Butter or oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Dice the onion and sauté in a little butter/oil in a pan. Deglaze with white wine and add the cream and crème fraîche. Then add 1 teaspoon of lemon juice, 1/2 teaspoon of honey and basil. Stir the sauce well and let it reduce slightly. In the meantime, cut the smoked salmon into large pieces, not too small, otherwise it risks overcooking. Add it and continue to simmer over medium heat. Stir gently to avoid crushing the salmon. Season the sauce with salt, pepper and paprika while it cooks. Vary the sauce to your liking (more acidic or mild) with the remaining lemon juice and honey. In the meantime, heat the gnocchi briefly in a pan with a little oil and the teaspoon of green pesto and brown if desired. Tip: The sauce also tastes good with pasta.
