Ingredients for 2 servings:

  • 1 pack of gnocchi from the refrigerated section
  • 1 zucchini
  • 1 small can of corn
  • 1 bunch of spring onions
  • 5 cherry tomatoes
  • 2 tbsp olive oil
  • Herbs (e.g. oregano, thyme)
  • Pine nuts, roasted
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the spring onions and fry them in a non-stick pan with olive oil. Meanwhile, dice the zucchini, halve the cherry tomatoes, and drain the corn. Add the zucchini and corn to the spring onions. Add the gnocchi and heat everything thoroughly. Finally, add the halved tomatoes and herbs, season with salt and pepper. Serve on plates and sprinkle with the toasted pine nuts.
