Crêpes with apricots

Ingredients for 4 servings:

  • 2 eggs
  • 180 g flour
  • 1 pinch of salt
  • sweetener
  • 250 ml milk, low-fat
  • 3 tbsp mineral water
  • 250 g apricot(s) (alternatively canned, without sugar)
  • 6 tsp apricot jam, reduced calorie
  • 1 tbsp lemon juice
  • 1 packet of vanilla sugar

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Whisk eggs, flour, salt, sweetener, milk, and mineral water into a smooth batter and let it rest for about 15 minutes. Pit the apricots, cut them into pieces, puree them with jam, lemon juice, and vanilla sugar, and season with sweetener to taste. Bake the batter in a non-stick pan until thin, golden-brown crêpes are formed. Spread the crêpes with the apricot sauce, roll them up, and serve.
