Gnocchi salad with herb cream cheese and tomatoes

Ingredients for 1 servings:

  • 500 g gnocchi, dried or chilled
  • 500 g tomatoes, pureed
  • ½ pack of herb cream cheese
  • 1 handful of basil
  • 1 handful of cocktail tomatoes, or more, if desired
  • e.g. salt and pepper
  • 1 package of feta cheese or mozzarella

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Cook the gnocchi until they are not quite soft, but float to the surface. Drain and immediately pour over the passata. While still warm, add the herb cream cheese and chopped basil. The basil can be frozen or fresh. Let the salad cool slightly. Once the salad has cooled, add the halved cherry tomatoes and the diced feta or finely chopped mozzarella. Season with salt and pepper.
