Gnocchi with Colorful Spring Vegetables

The perfect gnocchi with colorful spring vegetables recipe with a picture and simple step-by-step instructions.

  • 500 g Gnocchi
  • 2 Tomatoes
  • 1 Zucchini
  • 250 g Mushrooms
  • 1 Bell pepper
  • 1 Onion
  • 1 Can Pizza tomatoes
  • 200 g Processed cheese
  • 250 g Ham cubes
  • Salt
  • Pepper
  • Hot paprika powder
  • Dried basil
  • Dried oregano
  • Dried thyme
  • Oil
  1. Prepare the gnocchi according to the instructions on the packet.
  2. Peel and dice the onion, clean and dice the peppers, dice the zucchini and sauté everything with the diced ham in a large pan.
  3. Cut the mushrooms into slices, dice the tomatoes, add to the remaining vegetables and cook until cooked, season everything well with salt, pepper, paprika powder, oregano, thyme and basil.
  4. Add the pizza tomatoes and the processed cheese and heat until the cheese has melted, drain the gnocchis in a sieve, add to the vegetable pan, mix everything well, heat again vigorously and serve.
