Gnocchi with green beans and mushrooms

Ingredients for 4 servings:

  • 600 g gnocchi
  • 600 g green beans
  • 200 g spring onions
  • 400 g mushrooms
  • 1 small onion(s)
  • 1 tbsp vegetable oil
  • 1 tbsp thyme
  • some savory
  • salt and pepper
  • Vegetable broth, instant

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Clean and slice the mushrooms. Clean and slice the spring onions. Peel the onion and finely chop. Heat the oil in a large pan. Add the onion and sauté. Then add the mushrooms and season lightly with salt and pepper. Once the mushrooms are well browned, add the spring onions. Season with the thyme and sauté with the lid closed for about 5 minutes. Meanwhile, cook the gnocchi according to the package instructions. Also cook the beans in salted water if you aren’t using pre-cooked beans. Now add the beans to the pan (I use pre-cooked beans) and heat through. Season with the remaining spices, especially with the thyme. Finally, fold in the gnocchi. Serve immediately.
