Gnocchi with spicy shrimp tomato sauce

Ingredients for 2 servings:

  • 1 pack of gnocchi
  • salt water
  • 6 king prawns (3 prawns per person)
  • 2 large beef tomatoes, diced
  • 30 g tomato paste, concentrated
  • 1 clove(s) garlic
  • 1 shallot(s)
  • 1 bag of arugula
  • salt and pepper
  • basil
  • chives
  • chili powder
  • Olive oil, virgin

Gnocchi Rosso Pomodoro

Sear the king prawns in extra virgin olive oil in a deep pan, then remove and set aside. Sauté the shallot and garlic in the same pan. Meanwhile, heat salted water for the gnocchi and prepare the gnocchi according to the package instructions. Add the finely diced beefsteak tomatoes, their juice, and the tomato paste. Season with pepper, salt, fresh basil, chives, and chili. Fold in the cooked gnocchi and place the king prawns on top to warm through. Cover the pan and let stand for 2-3 minutes. Serve on a pasta plate with the prawns on top! Serve with freshly grated Parmesan cheese and crisp arugula. Fresh white bread and red wine make a wonderful accompaniment!
