Gnocchi with spinach and cheese sauce

Ingredients for 2 servings:

  • 500 g gnocchi, fresh
  • ½ pack of herder’s cheese with herbs
  • 300 g leaf spinach, frozen
  • 1 vine tomato(s)
  • 1 onion(s)
  • e.g. garlic, fresh or frozen
  • Milk
  • salt and pepper
  • Butter for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, dice the onions, tomatoes, and garlic. Then add everything to a pan and sauté with a little butter over medium heat. When the onions are translucent, add the gnocchi. Fry them for 3-5 minutes. Then add milk so that the bottom is well covered. Once the milk is simmering, add the spinach. It’s best to put a lid on the pan so the spinach thaws faster. When the spinach is half thawed, crumble the feta cheese over it. Stir occasionally until the cheese is nicely melted. Season with salt and pepper to taste. Also suitable for baby-led weaning; make a portion before adding the salt and pepper. My daughter loves it!
