Gnocchi with spinach and tomatoes

Ingredients for 3 servings:

  • 400 g gnocchi, fresh
  • 200 g leaf spinach, frozen
  • 1 small onion(s)
  • 10 small tomatoes
  • 1 large garlic clove(s)
  • olive oil
  • Tomato paste
  • Tomatoes, pureed
  • salt and pepper
  • nutmeg
  • basil
  • marjoram
  • oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

quick, easy, vegan

Dice the onions. Crush the garlic and sauté in a little olive oil. Add the spinach and let it thaw in the oil. Cook the gnocchi according to the package instructions and drain. Season the spinach with salt, pepper, and nutmeg. Stir in 1-2 tablespoons of tomato paste. Add the gnocchi and deglaze with some of the passata. Season to taste with salt, pepper, oregano, basil, and marjoram. Halve the tomatoes and stir in. Serve hot, garnished with fresh basil, if desired.
