Ingredients for 4 servings:
- 1 egg(s)
- 4 tbsp flour
- 5 tbsp breadcrumbs
- 4 goat cheese medallions
- 6 tbsp oil
- 2 wholemeal rolls
- 200 g chanterelles, cleaned and trimmed
- 8 cherry tomatoes, halved
- some rocket leaves, cleaned
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Form a breading with the beaten egg, flour, and breadcrumbs. Coat the goat cheese slices in it. Heat 4-5 tablespoons of oil and fry the cheese slices for 5-6 minutes until golden brown, turning once. Then remove the slices and keep warm. Cut the rolls in half and fry each half in 1 tablespoon of oil, then keep warm. Add the chanterelles to the pan and fry thoroughly. Add the tomatoes and fry briefly. Place the chanterelles, tomatoes, and arugula on the roll halves. Place the goat cheese slices on top and serve lukewarm.
